This statement is about the use of sulphur dioxide as a food preservative.

Before you go on, you should find and read the statements in your copy of the syllabus.


Sulphur dioxide is used as a preservative in, for example, wine and dried fruit and vegetables.

It has two functions. It is a reducing agent and so slows oxidation of the wine or dried fruit by oxygen in the air. And it also kills bacteria.
